TR19 Grease Cleaning
Commercial Kitchen Canopy Cleaning
What does canopy cleaning involve?
Canopy cleaning removes grease from the extract hood above the cooking line: the filters, the canopy interior, the plenum chamber behind the filters, and the capture jets. It is the first section of the grease extract system and the one that fouls fastest, which is why it is cleaned more often than the ductwork it feeds.
How often should a commercial kitchen canopy be cleaned?
More often than the duct behind it. Filters and the canopy interior sit closest to the source, so they load first. Many kitchens clean filters weekly in-house and have the canopy and plenum done professionally on the same schedule as the duct.
BESA sets the baseline interval for the extract system by daily cooking hours: twelve months at light use, six at moderate, three at heavy. Those bandings are subject to a competent person conducting a cleanliness risk assessment.
A kitchen that fries heavily for eight hours a day will foul faster than a lighter kitchen running twelve, so let the measurement set the interval. Full detail is on the kitchen extract cleaning page.
What gets cleaned
| Part | What is done |
|---|---|
| Grease filters | Removed, degreased and refitted. Filters that have deformed or lost their baffles get flagged rather than put back. |
| Canopy interior and plenum | The chamber behind the filters, which holds more grease than the visible surfaces and is the part most often skipped. |
| Capture jets and extract slots | Cleared so the canopy pulls evenly across its whole length again. |
| Lighting units and diffusers | Cleaned and checked. If a lamp has failed, we tell you. |
| Visible stainless steel | Wiped down at the end so the kitchen looks handed back. |
The second row is the one that separates a real clean from a wipe down. A canopy can look spotless from the kitchen floor while the plenum behind the filters is still loaded, and that is the part an inspector reaches for.
Do I get a certificate for canopy cleaning?
Yes, and it should carry readings rather than just a date. Grease depth recorded before and after, photographs tied to the access point they were taken at, and anything that could not be reached written down.
What a certificate contains and why your insurer asks for it is set out on the TR19 certificate page.
What does canopy cleaning cost?
Extract cleaning in the South East starts from around £350. For a canopy the number moves on its length, the number of filters it carries, and whether the plenum can be reached without dismantling anything. Out of hours work adds to it again.
Canopy-only cleaning costs less than a full system clean, but it is worth knowing what it does not cover. Cleaning the canopy while leaving the duct loaded moves the grease problem out of sight rather than out of the building.
